This recipe has been a favourite in our household ever since I accidentally created it! It’s perfect for those lazy weekend mornings when you want something warm but still healthy. It also tastes just as good reheated the next day, just refrigerate the leftovers (if there is any 😉) until you’re ready to eat.
This baked oatmeal makes the perfect lazy weekend breakfast served with some coconut yoghurt and a big mug of fresh brewed coffee.
Blueberry Coconut Baked Oatmeal

Ingredients
- 1½ cups wholegrain oats
- 1 ripe banana, mashed
- 1 cup plantbased milk
- 1/2 cup shredded coconut
- 2/3 cup blueberries (fresh or frozen)
- 2 TBSP ground flaxseed
- 2 TBSP maple syrup
- 1 Tbsp cinnamon
Directions
- Pre-heat oven to 180°C.
- In a large bowl mash the banana, then add the rest of the ingredients and mix thoroughly.
- Transfer mixture to an oven safe dish and bake for about 40mins or until the top is nice and crispy, this will depend on your oven. You want it to have a crisp baked outside but still soft on the inside.
- Slice into 2 or 3 pieces, depending on how hungry you are, and enjoy ♥
