These cacao tartlets came about one afternoon when I was craving a sweet treat. Now this doesn’t happen very often as I have a non-existent sweet tooth! So I rummaged through my pantry and came across oats, cacao and some coconut yoghurt. So I decided to make a modification on a raw cheesecake I usually make and this was the end result.
Sweet from the cacao and maple syrup, but tart from the coconut yogurt and berries, this really is the perfect summer night treat. I say ‘treat’ lightly because there is only good ingredients in this! No nasty ingredients here! A healthy desert 🙂
As this is a raw desert you will need to allow a few hours for the tartlets to harden in the fridge, so I suggest grabbing a nice glass of sauvignon blanc (my favourite is this Baby Doll one which is vegan ) and relax with a good book! I’m currently loving the new Stephan King and Owen King novel Sleeping Beauties.
Cacao Tartlets with Coconut Yogurt & Berries
Makes 4
Ingredients
- 1 1/2 cups oats
- 1/2 cup dates (if dried soak in hot water for 10mins to soften)
- 3 TBSP maple syrup
- 3 TBSP coconut oil (melted)
- 3 TBSP cacao powder
- 1/2 tsp vanilla essence
To serve
- Coconut yogurt – my favourite is this one
- Fresh or frozen berries of choice
- Shredded coconut
Directions
- In a food processor add the oats and process into a fine meal
- Add in all the other ingredients and blend until the mixture comes together, it should bind together when pressed between your fingers
- Divide the mixture between tart pans or muffin tins and push into shape, you want to have the mix coming up the sides abit to hold the coconut yoghurt
- Place in a refrigerator for 2-3 hours to harden
- When ready to serve scoop a dollop of coconut yoghurt into the tartlets and top with your choice of berries and the shredded coconut
